A couple of years ago we got a bunch of blackberries, raspberries and marionberries from a u-pick berry patch and Mike made several containers of delicious freezer jam. Eventually the inevitable happened and we ran out of jam.
Luckily, we still had some frozen berries which Mike cooked down with some honey and cinnamon for a topping on our Saturday morning pancakes. Call it love at first berry-scrumptious bite.
The u-pick berries are long gone, but instead of buying jelly from the store, every few weeks we will pick up a bag of frozen berries to make this “better than jelly” fruit topping.
Wild (from the Freezer) Berry Compote
1 cup frozen berries
1 tablespoon honey
1/4 teaspoon cinnamon
In small sauce pan, combine all ingredients. Heat on medium to medium low while pancakes are cooking.
Tip: For a fresher taste, cook only until berries are thawed. For a thicker topping boiling longer. Berries contain natural pectin. Boiling longer will evaporate some of the moisture and also release some of the pectin. Take off heat a few minutes before serving. Topping will further thicken as it cools.
Spoon topping over pancakes. Dig right on in!
