Ah, ’tis the season for berries. Blueberries, raspberries and strawberries have flooded the produce aisles at my local grocery store. I have added a few of the green card board pints loaded with fresh fruit to my shopping cart, often times without an end goal for their use.
It was after such a market trip that I found myself a bit overloaded with strawberries. Not wanting them to go bad in my fridge, I decided to come up with a dessert option for the hubster and me.
Chocolate-covered strawberries was one of those delicacies that I have never been able to convince myself I needed to purchase. Perhaps I saw it as a luxury expense . . . or one of those for “romantic purposes only” items. It wasn’t until I started contemplating creating a small batch that the spell of unobtainable was broken. It was no longer this high-end item but rather exactly what it was: strawberries dipped in melted chocolate chips.
Well, I can do that. And I did.
Using the double-boiler, I melted down some chocolate chips (about six ounces to one pound of strawberries). Once it was melted, I dipped the strawberries into the chocolate, rolling it around in the gooey puddle before setting it down on parchment paper to dry.
The best part about this dessert is that it feels decadent, while using ingredients you probably already have. Just add berries.
